The Characteristics of Nakiri Knives
Nakiri knives are Japanese knives that are almost exclusively used for cutting vegetables and herbs. Each of the numerous Japanese kitchen knives is dedicated to a specific use. Its tall blade, which resembles a cleaver, allows for quick vertical cutting of vegetables. This vertical motion saves the user a lot of time and is faster than the rocking motion of Santoku knives or chef's knives.
The height of the blade also prevents the hand holding the handle from hitting the cutting board at the end, unlike a chef's knife or utility knife. The Japanese Nakiri knife is rectangular in shape and has a blade length of 14 to 18 cm. It is therefore ideal for cutting thick vegetables and aromatic herbs. Its flat surface allows you to transfer the cut food from the cutting board to your pan.
